The Beer & BBQ Seafood menu is matched to great Boutique Beers from around Australia and gain understanding of how each beer is best suited to each course. Learn tips and tricks of beer and food service and connecting style and weights of beverages to best suit the course and achieving balance. We teach you how to successfully use the roasting hood when roasting a whole Barramundi on a BBQ and how to cook effectively when entertaining for a group. Turkish Bread with Pukara Balsamic and Oils
BBQ Spiced Kingfish with Roasted Capsicum and Herb Salsa
BBQ Spiced Crusted Swordfish with Rocket, Grain Salad and Honey Dijon Dressing
BBQ Steamed Mussels with Jamaican Curry, Fennel and Beer
BBQ Crispy-Skinned Barramundi with Sweet & Sour Papaya Salad
The Chefs will discuss BBQ cooking and cover all the important methodology around temperatures and resting meats to ensure that you will really impress when you next entertain at home. We then get straight in to demonstrating the first dish where you will replicate the dish demonstrated by the Chef and prepare and cook the dish yourself.
We sit down together as group to share in the first dish before embarking on the next Beer & BBQ Seafood dishes covering all parts of BBQ myths and secrets as well as a demonstration before being given the tongs and lifters to re-create your recipes yourself.
Throughout this segment the Chefs will guide you through preparing and cooking each dish as well as answering any questions you may have about the dishes or challenges you face at home with your own BBQ or certain recipes!
We will send you home knowing that you’re a qualified BBQ expert and will be crowned in glory by friends and family when you entertain at home.

Lessons are attended by between 12-20 students (plus 2 experienced chefs) and take place usually from 11:30 AM to 2:00 PM.
The class includes all ingredients, light refreshments and a fantastic meal to enjoy together. The classes are both a demonstration and hands on experience to ensure you have the confidence to replicate the dishes at home.
This experience is best enjoyed as a participant. To ensure maximum space and comfort of booked guest we do not have spectators for this experience.
